The succulent, juicy-pink, melt-in-your-mouth rōsu (loin) and hire (fillet) pork cutlets deep fried in light yet crunchy home-baked breadcrumbs are exceptional. For devotees and the gluttonous, premium ‘tokujō’ cuts of loin or fillet are divine. Both are best experienced as teishoku set meals complete with pickles, miso soup, rice, lemon and crispy-fresh shredded Miura cabbage.

Our restaurant was founded in 1975 by my father. Sadly, he passed away in 2020, and today I continue the business as the owner.

My father’s original philosophy was simple:
“Do work that truly makes customers happy.”

Rather than merely preserving the outward form, I believe tradition means carrying forward the spirit, dedication, and pursuit of mastery that my father poured into his craft.

I grew up in this restaurant. As a child, I was carried on my mother’s back while she worked in the dining area. After closing time, my father would rub my cheeks with his oil-stained hands. I was surrounded by the aroma of toasted breadcrumbs, rich lard, and the lively presence of countless customers.

I believe that starting something from such a young age is a great advantage. This is true for sushi, for tonkatsu, and even for martial arts.

The way tonkatsu is fried changes every day. The size of the meat, the balance of lean and fat, and even the temperature and humidity all affect the timing. My father used to say, “Listen to the cutlet while you fry it. Just like your mother, it’s different every day.”

There is no written recipe for our sauce.I learned it by helping beside him since childhood, absorbing the process through years of experience. We don’t use measuring cups or scales—only the same rice bowls our family has used for generations. It is truly a sauce passed down by word of mouth.

Our miso soup is another point of pride, thanks to my mother’s strong commitment. It is served piping hot, with an abundance of rich bonito dashi.

In this way, we continue to offer the traditional craftsmanship passed down from the previous generation.
